It’s Pumpkin Bread Time!


Yes, it’s pumpkin bread time! What is this season without pumpkin?? Pumpkin pie, pumpkin cookies and pumpkin bread.

I have a great recipe for pumpkin bread that I want to share with you. This recipe comes from a co-worker of mine from many years ago. It’s still my favorite recipe, and the bread is wonderful! Make sure you have a large mixing bowl!

PUMPKIN BREAD

4 eggs — 3 c. sugar — 1 c, salad oil — 2/3 c. water

3 1/2 c. flour — 2 t. soda — 1 1/2 t. salt — 1 t. cinnamon

1 t. nutmeg — 1 sm. can pumpkin

Mix dry ingredients, add eggs, water, oil and pumpkin. Mix well. Pour into two large of three small loaf pans* Bake at 350 degrees for 55 minutes.

*Note: I use the mini loaf pans (about seven of them) and bake for 40-45 minutes.

These make great holiday gifts for friends and neighbors. I give these to my neighbors at Christmas time. I wrap each loaf of bread in plastic wrap, then put in a decorative “treat” bag, tie the bag with a festive ribbon and add a tag or sticker indicating that the loaf is pumpkin bread.
